So my latest experiment in baking was a White Chocolate Sweet Potato cake from Martha Stewart.

The recipe calls for BRANDY!
Hmm this seems like a lot of batter for 2 eight inch cake pans…
It was…but I used the left over to make mini muffins.
The frosting calls for:
An entire pound of white chocolate.
Verdict: the cake is delicious…however the frosting is just too much! I should have gone with my instinct and went with a cream cheese frosting…with a pound of white chocolate the frosting was too much with the white chocolate…and I LOVE white chocolate…usually.
